The elderberry has been defined as the guardian of health since antiquity. It has a strong coloring power, giving the bluish/violet color to the products to which it is added. Origin of raw materials
The bees of the species Apis mellifera Iberica collect this honey with a very dark and amber tone, marked aroma and flavor, with a slight astringency, typical of heather nectar.
The elderberry has been defined as the guardian of health since antiquity. Originally from Central and Southern Europe, it was taken by the Portuguese and Spanish to the “new world” where it acclimatized in numerous countries. In Portugal, it is found spontaneously throughout the country, with a higher incidence in the North, in the Varosa region (municipalities of Tarouca, Armamar, Lamego, Tabuaço and Moimenta da Beira).
With a dark red pigment, it has a strong coloring power, giving the products to which they are added a bluish/violet color.
