Azores Pineapple Extra Jam With Lemongrass

The pineapple from Azores/S. Miguel from Portugal (Ananas comosus L. Merril, Cayene variety) is produced in glass greenhouses using traditional cultivation techniques: application of “fumes” and the use of “warm beds” based on vegetable matter. After a period of two years, from planting to harvesting, a fruit with unique aroma and flavor qualities is obtained. The culture was introduced in S. Miguel around 1840-50, being commercialized in Europe for more than a century. Cylindrical shaped fruit, slightly tapered, with a strong orange peel and yellow pulp. The pineapple pulp has a translucent yellow color, a sui generis bittersweet flavor and a very pleasant aroma. Lemongrass (Cymbopogon citratus) appears spontaneously in the savannas of southern India, Indonesia and Malaysia, and is widely cultivated in Africa and Brazil, as a medicinal and spice plant, supplying the cosmetic, pharmaceutical and food industries. Used in tea, it results in a very pleasant drink with a strong lemon flavor, which works as a digestive and can accompany meals. Can be used to improve bad mood and heartburn. Rosemary and eucalyptus honey, more aromatic than other honeys, has a light brown tone and a more open aroma and palate. Originating in North and Central America, where it is still one of the mainstays of food, the pumpkin belongs to the same family as the melon and watermelon (cucurbits). The shape of the pumpkin is variable, but it is usually ovoid or oblong. The rind is usually orange, but it can have other colors depending on the species. The bright orange color of the pumpkin contains a high content of carotenes, particularly beta-carotene, with antioxidant action. Beta carotene is then converted into vitamin A in the body. Honey harvested on the slopes and valleys of Serra da Lousã. Mountain honey, characteristic of heather monoflowering, common in the highlands of the central mountain massif. It is a honey full of personality, with a strong flavor, slightly acidic and dense consistency. It presents itself with a very dark and amber tone. It has a striking aroma and flavor, slightly spicy, resulting from the mixture with ginger, and with a slight astringency, typical of heather nectar. Ginger is an herbal plant with many health benefits. As a medicinal plant, it is one of the oldest and most popular in the world. It is considered a powerful anti-inflammatory, anticoagulant, antioxidant and bactericidal.

Rosemary Honey with Apple and Cinnamon

Clear honey, with a mild and aromatic flavor, is collected by bees in the abundant fields of Rosmaninho, located on the lower slopes of the Serra da Malcata, a nature reserve, located between the village of Penamacor and the city of Sabugal, with 21,000 hectares. This area was chosen due to its isolation and richness in wild flowers, heather and rosemary, from which bees extract high quality honey. The Portuguese rosemary are all small woody shrubs, easily identifiable by their aroma and by the violet, lilac or white spikes that lay in the small crown. Rosemary, a very honey-bearing plant, in favorable years allows hives to store up to 5 kg of this honey in a single day. The dehydrated apple, of Portuguese origin, is finely cut into slices, and results from a drying process that reduces the moisture content of the fruit to 2%, in a controlled environment, without the addition of sugars, dyes or preservatives, resulting in a 100% natural product.

We have selected the smoothest honey from orange blossom in Algarve. A clearer and smoother honey than Rosmaninho and characterized by its accentuated acidity. The chilli, of intense red color, is a spice with a pungent flavor. The spiciness of the seeds, due to the presence of capsaicin (the active ingredient in pepper) is acrid, locally causing rapid and energetic stimulation. Organic honey is a product that has been subject to production rules, which require the breed to be indigenous and adapted to local conditions, the choice of installation of the apiaries must have access to water and sources of nectar, from MPB cultures or spontaneous vegetation, and comply with the distances to sources of contamination.
