Origin of raw materials

The ‘Bravo de Esmolfe’ ApplePDO is an apple with unique characteristics, extremely aromatic and juicy, sweet and at the same time acidic. It has an oblong-conical shape, white pulp and its whitish epidermis sometimes has pink spots. This regional variety, known since the 19th century XVIII, is originally from the village of Esmolfe (Penalva do Castelo, Portugal) and would have come from a tree first cultivated from a seed. As its fruits are very popular, grafts were obtained that spread this variety to several fruit production areas, especially in the Beira Alta Region and in part of Cova da Beira.

Currants come from a bush and there are different cultivars (different types of the same plant) that produce it. As groselhas, geralmente, estão prontas para apanha entre meados e final do Verão. The bush reaches heights of 1m to 2m, produces a greenish-yellow flower. Gooseberries grow on the branches of the bush, being a bright red fruit.

Lemon verbena is known mainly for its digestive properties, and is also a nervous system relaxant, fighting migraines, nervousness, restlessness and insomnia.

Raspberries fight fluid retention, rid the body of toxins, improve the health of hair, nails and skin. With few calories, raspberries are a great option for those on a diet. September is the last month of your season. One of the nutritional properties that stands out the most is the richness in vitamin C.

The blackberry is a fruit of Asian origin that was later imported to Europe in the 17th century before being cultivated in other continents. Perhaps because it is a very fragile fruit, its production was largely reduced to domestic production. The blackberry (Rubus fruticosus) is the fruit (pseudoberry) of shrubs commonly known as brambles, of the Rosaceae family. Their shape gives them a very delicate texture that almost melts in the mouth. They have a sweet fragrance with a subtly acidic touch.

Nutmeg is one of the most appreciated and valued spices since antiquity for its aromatic, aphrodisiac and healing properties. The nutmeg fruit is a drupe, the size of an apricot. When it ripens, it divides and presents a seed surrounded by Nutmeg and Mace, and a lacy red layer known as “mace”. Mace is also marketed as a spice. Both nutmeg seed and mace are spices that contain many antioxidant chemical compounds known to act in disease prevention and health promotion.

The brandy produced from the best Portuguese grapes, has a unique aroma and flavor that results from the distillation of grapes from the Arinto, Periquita, Trincadeira and Fernão Pires varieties.
