Trás-os-Montes: a land of identity and excellence

In the northeast of Portugal, harsh winters and hot summers shape the character of the olives, concentrating their flavors and nutrients. Olive groves grow on steep terraced slopes where mechanization is limited and human expertise prevails.

This natural and cultural setting produces complex, full-bodied oils, rich in aroma – internationally recognized for their quality and purity.

Artisan production and respect for nature’s rhythm

Harvesting is done by hand, respecting the ideal ripeness of each olive. Within less than 24 hours, the olives are taken to the mill and processed with care to avoid oxidation and loss of quality.

Cold extraction, below 27°C (80.6°F), preserves the nutritional, sensory, and antioxidant properties of the oil. The result is a genuine, stable product, rich in polyphenols – reflected in its taste, health benefits, and longevity.

Three varieties, three expressions of identity

  • Madural: also known as Negral, this variety is highly resistant to the Transmontano climate. It produces a smooth oil with sweet notes and a delicate texture.
  • Cobrançosa: one of Portugal’s most prized varieties, rich in polyphenols, yielding fresh, fruity, and elegant oil with notes of green apple and herbs.
  • Verdeal Transmontana: an intense oil with persistent bitterness and green notes, offering a bold and authentic flavor for those who appreciate depth.

Co-extraction method: a natural fusion of flavors
