Origin of raw materials
Fig and Orange Extra Jam with Cinnamon
Depending on the production season, figs are called lampos (May and June) and vindimos (July/September). It is a fruit with well-marked organoleptic characteristics, with great nutritional qualities, being rich in vitamins B and C and minerals (especially calcium, phosphorus, and potassium).
Cinnamon has a warm, pleasantly sweet yet intense aroma. Its flavor is warm and fragrant, reminiscent of cloves and citrus fruits. It has a light brown color with bronze hues. For 200 years, the Portuguese controlled the monopoly on the commercialization of this spice, which originates from Sri Lanka.
Redurrant and Raspberry Extra Jam with Lemon Verbena
Currants come from a shrub, and there are different cultivars (different types of the same plant) that produce them. Currants are usually ready for harvesting between mid and late summer. The shrub grows to heights of 1m to 2m, producing a yellow-greenish flower. The currants grow on the shrub's branches and are a vivid red fruit.
Lemon verbena is primarily known for its digestive properties and is also a relaxant for the nervous system, combating migraines, nervousness, agitation, and insomnia.
Raspberries help combat water retention, release toxins from the body, and protect hair, nails, and skin. With few calories, raspberries are an excellent choice for those on a diet. September is the last month of the season. One of the most notable nutritional properties is their high vitamin C content.
Galician Olive Paste with Fig
Galician Olive from Beira Baixa, the prepared product, obtained from the Galega variety of Olea europaea L.
Production method: The fermentation of the Galician Olive from Beira Baixa IGP is done through the natural curing method. The traditional fermentation process used, passed down through generations by local participants, enhances characteristics such as weight, color, salt content, and a slight vinegary aroma, distinguishing it from its counterparts.
Particular characteristics: The climate and soil of the region, along with the experience of local populations, make the Galician Olive from Beira Baixa IGP a product with unique characteristics.
Geographic area: The production of the Galician Olive from Beira Baixa IGP is restricted to all parishes of the municipalities of Covilhã, Belmonte, Fundão, Penamacor, Idanha-a-Nova, Castelo Branco, Vila Velha de Ródão, Proença-a-Nova, Oleiros, Sertã, Vila de Rei, and Mação.
History: Olive cultivation is closely tied to the Beira Baixa region, as evidenced by various historical records, which show that as early as the beginning of the 16th century, olive groves were well established in the region, and extensive olive groves were being formed near Castelo Branco. The Galician Olive from Beira Baixa, produced through manufacturing processes and conservation techniques passed down from generation to generation and still used today, is considered a traditional product in this region and has long occupied an important place in both the diet of its inhabitants and the development of the local economy.
