Make a cake without eggs, without milk, without butter, etc. It may seem like a daunting task, but it's actually quite simple! Vegetarianism is a trend that has been growing substantially, as the population seeks to develop healthier and more sustainable habits of conjuice. In Portugal, in the last 10 years, the number of vegetarians has quadrupled. Thus, we hear more and more about vegan food, that is, without any products of animal origin and luckily there are also more and more vegetable alternatives available in supermarkets such as vegetable drinks, cream of soy, among many others, which allow you to prepare practically any dish. in a vegan version!
In colaboration with Francisca Mendes – Green Delights we created a recipe for a simple, fluffy and delicious cake that will please everyone at home, whether they are vegetarian or not!

Ingredients
Cake:
- 1 cup of green tea
- ½ cup of sunflower oil
- 1 lime (juice and zest)
- 1 lemon (juice and zest)
- 1 tablespoon ground flaxseeds
- 2 cups of spelt flour
- 1 cup of brown sugar (sifted)
- 1 tablespoon of baking powder
Filling:
- Raspberry and Lime Extra Jam with Mint meia.dúzia® (to taste)
- 1 soy cream packaging
- 1 lime (juice and zest)
- 2 + ½ tablespoons of sugar
- ½ teaspoon of vanilla extract
Method of preparation:
- Start by preparing the green tea and let it cool completely;
- Preheat the oven to 180ºC;
- In a bowl, mix the solid ingredients (flour, sifted sugar, yeast and zest of lime and lemon);
- In another bowl, mix the liquid ingredients (tea, sunflower oil and lime juice and lemon);
- Add the ground flaxseed to the liquid ingredients and stir well;
- Combine solid ingredients with liquids;
- Pour into a round shape (~24 cm in diameter) lined with parchment paper;
- Bake in the oven for 20 to 25 minutes;
- Let the cake cool completely;
- Repeat this process to make a second cake;
- For the filling, beat the cream and then add the juice and zest of lime, sugar and vanilla extract;
- Start by covering the first cake with a layer of Raspberry and Lime Extra Jam with Mint meia.dúzia®, followed by a layer of cream;
- Cover with the second cake;
- To finish, decorate with sifted powdered sugar and fresh raspberries (optional).
