Drunk Rocha Pears with Lemon Ice Cream and ‘Rocha’ Pear and Redcurrant Jam with Melissa and Pink Pepper

Ingredients

Method of preparation:

  1. Peel 4 firm rock pears, slightly cut the base and leave the peduncle;
  2. With the pears arranged, combine the ingredients for the syrup in a pan;
  3. In a saucepan, combine the ingredients for the syrup and start with 250 ml of red wine, followed by 250 ml of port wine;
  4. Add the 4 tablespoons of brown sugar, 1 cinnamon stick, 1 star anise, 4 heads of cloves, the piri-piri and the grated nutmeg;
  5. Finish with a pinch of salt, the zest of half an orange and half a lemon, and a little lemon juice;
  6. Stir well, insert the Rocha pears and put the pan on the heat for 30 minutes;
  7. Turn the pears so that they absorb the flavour of the syrup;
  8. Remove the pears and let the sauce cook for another 10 minutes;
  9. Serve the Rocha Pear with a scoop of lemon ice cream, drizzle with the syrup and finish with the 1 tube of ‘Rocha’ Pear and Redcurrant Jam with Melissa and Pink Pepper meia.dúzia®
