Cod confit on a bed of greens with Olive Paste

The perfect cod dish to serve at Christmas dinner and surprise the family.

Method of preparation:

  1. Place the cod in a deep pan and cover half a piece with olive oil;
  2. Add the garlic and bay leaf and let the cod confit over low heat for about 10 minutes;
  3. Remove the cod and add, in the same pan, the onion cut into half moons and the red pepper cut into thin strips;
  4. Let it brown and season with salt and pepper;
  5. Separately, place small peeled potatoes on a tray, seasoned with salt, pepper, and paprika and roast until golden;
  6. In a platter, arrange the onion and pepper, and cover with cooked greens;
  7. Add the candied cod, the Negrinha do Douro Olive Paste with Spices (to taste) and also the baked potatoes;
  8. Bake in the oven for 10 minutes and it's ready to serve!

Suggestion: As a side dish, serve a salad of fresh spinach, orange wedges, toasted pine nuts and dried cranberries.
