Turkey with Apple Reineta puree and Strawberry and Mint Jam

  • 600g of turkey breast
  • 50 ml of extra virgin olive oil
  • 100ml of white wine
  • 300 ml of soy sauce
  • 1 branch of rosemary
  • 1 branch of parsley
  • 1 branch of thyme
  • 4 oranges
  • pepper to taste
  • 800 g of reineta apple
  • cinnamon sticks to taste
  • salted butter to taste
  • Lemon peel to taste
  • 100 ml of Strawberry Extra Jam with Mint meia.dúzia®
  • 100 g of chopped raspberry
  • 100 g of sliced strawberries
  • 20 ml of lemon juice
  • Salt to taste
  • Red fruits

Method of preparation:

  1. Turkey: On a tray, place the turkey, the juice of orange and the orange peels. Add the olive oil, the soy sauce and the remaining ingredients. Leave to marinate for two hours. Bake in the oven at 200ºC for about 40 minutes. Unravel the turkey breast;
  2. Puree: With a corer, remove the core of the apples. Inside the apple introduce the cinnamon stick, a nut of butter and a lemon peel. Bake in the oven at 200ºC for about 30 minutes. Remove the cinnamon stick and lemon peel and puree the apples, adding more butter if necessary;
  3. Sauce: In a pan, bring the strawberries, raspberry, juice of lemon, salt and Strawberry Extra Jam with Mint meia.dúzia® until obtaining a consistency of compote.
